Murgh Makhani or Butter Chicken Curry Recipe

Here is another way to prepare this well known chicken curry recipe, the Murgh Makhani, better known as butter chicken in english. This curried chicken recipe is a classic among all curries and it goes without saying that it is well appreciated in the UK.

Ingredients (for six guests):

* 1 whole big chicken
* 1 and 1/2 small plain yogurt
* 1 can 1/2 peeled and chopped tomatoes
* 1 tablespoon ground coriander
* 1 teaspoon turmeric
* 2 teaspoons cumin
* 6 cardamom pods
* 2 tablespoons lemon juice
* 2 shallots
* 2 cloves garlic
* 2 teaspoon minced ginger
* 1 teaspoon cinnamon
* 1 teaspoon chili powder (or less to taste)
* 1 teaspoon back pepper
* 1 teaspoon allspice
* sal, to your taste
* 5 tablespoons ghee
* 1 tablespoon chopped fresh cilantro (optional)


1) Cut the chicken into pieces and place them in a baking dish. In a bowl, mix the yoghurt with crushed garlic, 1 teaspoon cumin, 1 teaspoon minced ginger, 1 teaspoon allspice, pepper, lemon juice, coriander, roughly 4 cardamom pods crushed with a mortar and the turmeric.

2) Stir this spices mix well, and pour over the chicken pieces and rub the spices well. Plastic wrap the dish with the chicken pieces and marinate overnight. In a pan, cook the chopped shallots in a butter, add a pressed-in garlic clove, 2 coarsely crushed cardamom pods (using a mortar), 1 teaspoon pepper, 1 teaspoon ginger, turmeric, 1 teaspoon cumin add the tomatoes, use the box to meter water and pour into the pan, bring to a boil and add the chicken stock cube; add the ghee; Simmer 40-50 minutes.

3) Set the oven to bake setting, bake the chicken in a dish not too close to the grill, grill the pieces while monitoring closely and flipping them several times. Once the pieces well until well done (20 to 25 minutes), the meter into the sauce and add the juice made with chicken, cook for 20 minutes (check the chicken). Arrange the chicken pieces in a serving dish, thicken the sauce with the rest of the yogurt, then pour it over the chicken pieces and sprinkle with chopped cilantro.
