Tamarind Chicken Curry (Vatta kolambhu)

Here is curry recipe from Southern India; for this you will need tamarind which cannot really be substituted with anything else. You can find tamarind paste or concentrate at asian or latin stores.






Ingredients (for four guests):

* 4 chicken breasts or thighs (about 1 lb.)
* 2 tablespoons of plain yogurt
* 2 tablespoons of curry powder
* 1 onion
* 2 cloves garlic
* 1 tablespoon of peanut oil
* 4 cardamom pods
* 2 small cinnamon sticks
* 30 cl coconut milk
* 3 tablespoons tamarind concentrate, or 6 tablespoons tamarind paste

Preparation:

1) Cut chicken breasts into strips rather thick and place in a shallow dish.

2) Pour the yogurt and mix with the curry chicken in this marinade. Let stand for 1 hour in the fridge.

3) Peel the onion and cloves of garlic, cut into small moceaux. Fry in a skillet or wok with a tablespoon of oil. Add the chicken breasts with the marinade. Sauté for 5 min.

4) Add the cardamom seeds, cinnamon sticks and coconut milk. Stir while bringing to boil.

5) Then add the tamarind concentrate or the tamarind paste that you will have previously diluted in a little water and mixed.

6) Simmer over low heat about 30 minutes.

7) Serve with white rice or basmati, remove the cardamom seeds and the cinnamon sticks.
