Apple Chicken Curry Recipe

Chicken Curry with apples and yogurt seem like a somewhat strange combination, but this mix of ingredients actually works very well together in a curry.







Ingredients (for four persons):

* 4 chicken thighs
* 2 tablespoons tablespoons curry powder
* 1 cup uncooked rice (basmati)
* 2 apples
* 4 onions
* 2 small plain yogurts
* 1 lemon
* 1 tbsp chopped parsley
* 2 tablespoons butter
* salt, ground black pepper

Preparation:

1) Peel and chop the onions. Peel the apples and cut their flesh into small dice. Peel some zest from the lemon and blanch it for one minute, separately squeeze the lemon and reserve both the zests and the lemon juice separately.

2) In a skillet, heat up the oil, in the oil cook the chicken thighs on each side over medium heat. Reserve the chicken for later.

3) Replace the oil from the skillet with the butter and cook the onions until browned, with the lemon zests and the apple cubes over low heat. Sprinkle curry powder, turn the chicken, pour the lemon juice, salt and pepper. Cook over low heat, covered, for 20 min. Add the yogurt 5 min before the end of cooking.

4) Cook the basmati rice following package instructions.

5) Arrange nicely on a dish and garnish with parsley....

Serve this apple curry chicken with rice to your happy guests!
