Basic homemade chicken curry recipe

This simple recipe for chicken curry is a very good first step for you to try this type of cuisine; it needs few ingredients, only 30 minutes to make and it will give you an excellent idea of what curry chicken is about. You have been warned... even this simple curry recipe is highly addictive!

Ingredients (for two persons):

- 2 skinless chicken breasts
- 1/2 cup coconut milk
- 1/2 cup whipping cream
- 1 onion
- 1 clove garlic
- 1 green apple
- 3 dried kaffir lime leaves (can replace with 1 tsp lemon grass spice)
- 2 tablespoons curry powder (depends on your taste)
- 1 tablespoon ground almonds
- 1 tablespoon vegetable oil
- Salt

Preparation:

1) In a skillet heat up the oil. Peel and chop the garlic and the onion. Sauté 1 minute.

2) Add the chicken that you will have previously cut into strips (easier to cut if they are still a bit frozen) and cook until the chicken changes color. Add curry, lime leaves, ground almonds, apples, peeled and diced. Stir. Season with salt, to your taste. Heat 5 minutes over low heat.

3) Finally add the coconut milk and cream. Simmer over low heat for 10 minutes, stirring occasionally, until the chicken is tender.

4) Remove lime leaves. Serve your simple chicken curry with a nice portion of basmati rice!
