Ingredients (for four persons):
For the marinade:
* 2 tablespoon curry paste
* 1/2 tablespoon sugar
* 1 pinch salt
* 1/2 teaspoon lite soy sauce or 1 tablespoon soy sauce spicy
* 1 to 2 tablespoons of cornstarch mixed with a tablespoon of water
* 12 chicken wings, cut each into 3 pieces, tips discarded
For the sauce:
* 2 cups canned coconut milk
* 2 tablespoons curry paste
* salt, sugar to taste
* 3 tablespoons oil
* 5-6 potatoes, peeled and chopped
* 1 tablespoon oil
* water to taste
Preparation:
1) Prepare the marinade by mixing the curry paste, sugar, salt, soy sauce, cornstarch and mix. Add chicken wings, mix well and marinate for 30 minutes.
2) Meanwhile, let's prepare the curry sauce that will give our dish all it's flavour. In a small bowl, combine coconut milk, curry paste, salt and sugar. Reserve.
3) Pour oil in a large skillet, over heat setting at high. Brown the chopped potatoes, 4 to 6 minutes. Reserve.
4) Using the same pan, add two tablespoons oil, heat up over high heat. Brown the chicken wings on all sides for 3 to 4 minutes.
5) Using the same pan, add two tablespoons oil, heat up over high heat. Brown the chicken wings on all sides for 3 to 4 minutes.
6) Pour the sauce in the skillet and mix well. Add a little water if the sauce is too thick. Serve to your happy crowd...
