A haitian coco Chicken Curry Recipe

A mix of french and carribean food, the haitian recipes is truly something special. We had a chance to try it a while back and really enjoyed it; so here is a haitian curry recipe...






Ingredients (for six guests):

* 3 lb. chicken cut in pieces
* 2 cloves of garlic
* 2 onions
* 2 tomatoes
* 1 cup (250 ml) coconut milk
* 1 cup (250 ml) dry white wine
* 1 tablespoon curry powder
* 1 tsp. Saffron
* 1 tsp. tablespoon of paprika powder
* 1 cup (250 ml) chicken broth
* 3 tbsp. tablespoons olive oil

Preparation:

1) In a big skil;et, heat the oil. Add the chicken pieces and let them brown for 5 minutes, reserve.

2) Cut the onions and slice them. Peel and press garlic. Boil the tomatoes, peel and seed them. Cut into pieces. Put all the vegetables in the skillet and mix. Put back the chicken pieces in that skillet.

3) Add the curry and saffron, add the wine and broth. Cook 20 minutes over low heat: until the chicken is ready.

4) Now pour the coconut milk in, cook for 5 more minutes. Taste and adjust seasoning with salt or more curry.

Serve the chicken topped with the pan juices. You can accompany this meal with fried banana and a nice Creole rice...
