Thai Green Chicken Curry Recipe

Here is a recipe for traditional Thai green curry chicken. The green curry is known as the spiciest curry from Thai cuisine; there are a few more curries from Thailand. This recipe for Thai green curry can be prepared with chicken, meat, fish or vegetables and accompanied by jasmine rice or rice noodles, known as "Khanom Jeen".



Thai Green Curry




Ingredients (for four persons):

* 5 tablespoons (1/3 cup) green curry paste
* 4 cups coconut milk
* 2 kaffir leaves
* 2 lb. of boneless chicken thighs
* 1 lb. mushrooms
* 2 tablespoons fish sauce (nuoc nam)
* 2 tablespoons lime juice
* 1 tablespoon grated palm sugar (or brown sugar)
* 1 tablespoon minced ginger
* 2 stalks lemongrass
* 1/2 lb. of wild Thai eggplant, chopped
* 1 small zucchini, cut in five or more strips
* 1 small handful Thai basil
* 1 handful chopped fresh cilantro, leaves and stems separated
* 2 small red thai peppers, chopped; more for hotter
* 2 chopped green onions

Preparation:

1) We will be working with 2 saucepans or one saucepan and a Wok. In one saucepan heat up the green curry paste mixed with the coconut milk. Add the kaffir leaves and bring to a boil. The very second it starts to boil, reduce heat and simmer 5 minutes uncovered and without stirring.

2) Prepare and cut each chicken breast into four. Heat the wok or your second saucepan and start cooking the chicken pieces, and the sliced mushrooms.

3) Pour the fish sauce over the chicken, the lemon juice, the palm sugar and thai eggplant pieces. Simmer 5 minutes. When the chicken is cooked and tender, add the zucchini strips, thai basil and cilantro. Continue cooking until the zucchini is cooked.

4) Meanwhile, add these to the green curry sauce, and mix: minced ginger, lemongrass sticks, 4 kaffir leaves, red thai peppers and chopped cilantro stems. Cover and simmer 5 more minutes. Remove from heat and let stand 10 minutes.

5) Pour the chicken pieces with mushrooms in the green curry saucepan; cook until it starts to boil again, then remove from heat immediately. Remove the tough lemongrass pieces. Our Thai green curry chicken is ready...

Serve this thai curry chicken with rice noodles or jasmine rice.
