Recipe for Curry Chicken with Zucchini

A delicious and healthy curry, cooked with very little fat or without any fatty ingredient added, besides the chicken... With this recipe you can enjoy the deliciousness of chicken curry without the unhealthy compromises.






Ingredients (for four guests):

* 4 boneless and skinless chicken breasts, cut into strips
* Juice of 1 lemon
* 2 tablespoon curry
* 2 tablespoons soy sauce
* 1 tablespoon chopped garlic
* 1 tablespoon chopped chives
* 1 tablespoon chopped parsley
* 2 zucchini, chopped
* 3 small tomatoes, diced
* 1 large onion, chopped
* 1 tablespoon allspice
* Salt and pepper

* Preparation time: 15 minutes
* Cooking time: 30 minutes
* Rest: 30 min
* Total time: 75 minutes

Preparation:

1) In a bowl, mix together lemon juice, parsley, garlic, chives, soy sauce, allspice and curry. Add chicken strips and marinate for 30 minutes.

2) Heat a wok (or non-stick pan). Add the chicken and its marinade and brown it over medium heat.

3) Add the zucchini, diced tomato and chopped onion. Cover and cook over very low heat until the zucchini is tender, or about 15 minutes. Add a little bit water during cooking if necessary. Adjust seasoning and serve immediately.

Finally ... The zucchini (courgettes) will have more flavor if you sprinkle some salt over them towards the end of the cooking time. However do not add too much salt as this recipe already contains soy sauce.
